Crop thinning, viticultural practice designed to improve wine quality by encouraging fruit ripening, know as éclaircissage or vendange vert (green harvest) in French. Simply some bunches [clusters] are removed from the vine and those remaining ripen more quickly. Crop thinning is necessarily carried out by hand, and is therefore expensive. The yield is reduced more or less proportionately to the bunches removed, which means that only those growers able to guarantee top prices for their produce can afford the operation. […]
Bunches can be removed before flowering, or after fruit set. Early bunch removal (before flowering) of 50 per cent of the crop will cause less than a 50 per cent crop loss, as the remaining bunches will set better and berries grow larger, which is the principle of compensation common to many plants. One danger of thinning too early, however, is that, because berry size is increased so much, bunches may become so tight that they are prone to botrytis bunch rot. Later bunch removal has more impact on yield, and earlier removal on fruit ripening.
Thinning is also appropriate when it is obvious that the vintage will be late, decreasing the chance of ripening a large crop.
The theory of crop thinning is that the remaining fruit ripens earlier, and so has better levels of sugars and anthocyans for red varieties. However, many studies have shown that these benefits are small in magnitude, and that crop levels need to be greatly reduced for a small change in grape composition. For many vineyards where the yield is in balance with shoot growth, and the leaves and fruit are well exposed, then there will be little benefit from crop thinning. 2


Crop thinning subsequent to fruit set can help regulate yield and improve fruit composition at harvest. 3

Crop: O.E. cropp "bird's craw," also "head or top of a sprout or herb." Meaning of "harvest product" is c.1300, probably through verb meaning "cut off the top of a plant" (c.1213).

The verb is from O.E. þynnian "to make thin" (cf. Ger. dünnen, Du. dunnen); intrans. sense of "to become less numerous" is attested from 1743; that of "to become thinner" is recorded from 1804. Thin-skinned is attested from 1590s; the figurative sense of "touchy" is from 1670s. 5
