Definizione

Characteristic flavour of oil obtained from olives which have been heavily attacked by the grubs of the olive fly. 1

Nota

Montedoro and Col. have deepened the study on the effects of the D. oleae attack on the oil qualitative characteristics effecting the analysis of the phenolic constituents and of those volatile, verifying that the presence of D. oleae modifies the composition of the mentioned substances and interferes negatively also on the organoleptic characteristics and on their stability in time. 2

Contesto
