The free-run wine is of higher quality than the wine obtained by pressing the cap (press wine), as it contains low levels of phenolic substances. Press wine has more tannin, and may be blended with the free run wine in varying proportions according to the practice of the winemaker. 2
In some cases, the press wines are simply combined with the free run wine (or the two juices are mixed and fermented together). 3
