tartaric acid
EN
noun phrase
One of the good and essential acids in wine, giving a crisp palate and a necessary preservative. 1
Tartaric acid is used to correct the pH of grape juice or wine. Tartaric acid or malic acid, or a combination of tartaric acid and malic acid, may be added prior to or during fermentation, to grapes or juice from grapes. In addition, after fermentation is completed, citric acid, fumaric acid, malic acid, lactic acid or tartaric acid, or a combination of two or more of these acids, may be added to correct natural deficiencies. 2
The principal acids found in grapes, and therefore wine, are tartaric acid, potassium hydrogen tartrate (cream of tartar), malic acid and potassium hydrogen malate. 3
[tɑːˌtærɪkˈæsɪd] 4
Tartaric = from tartar "bitartrate of potash" (a deposit left during fermentation), c.1386, from O.Fr. tartre, from M.L. tartarum, from late Gk. tartaron "tartar encrusting the sides of casks," perhaps of Semitic origin.
Acid = 1626, from Fr. acide, from L. acidus "sour," adj. of state from acere "to be sour," from PIE base *ak- "sharp, pointed". 5
