Often referred to vinegar, it characterizes the series of odours detected in vintage wines, reminiscent of the smell of sap and resinous wood which are produced by phenol acids and benzoic acids (incense, tar, liquorice, resins, resinous wood, turpentine, vanilla, etc.) 2
These products typically have a clean balsamic vinegar flavor and aroma with a sweet and sour taste. The color is typically dark brown, except for white balsamic vinegars. 3
