Very large group of highly reactive chemical compounds of which phenol (C6H5OH) is the basic building block. 1

Nota

[Polyphenols] include many natural colour pigments such as the anthocyans of fruit and dark-skinned grapes, most natural vegetable tannins such as occur in grapes, and many flavour compounds. 1

Contesto

Red wine contains more polyphenols than white wine because the making of white wine requires the removal of the skins after the grapes are crushed. 2

Poly-: word-forming element meaning "many, much," from Greek poly-, combining form of polys "much" (plural polloi); cognate with Latin plus, from PIE root ple-; probably related to root pele- "to spread." In chemical names, usually indicating a compound with a large number of atoms or molecules of the same kind. 3

Phenol: "carbolic acid," 1844, from pheno- + -ol. Discovered in coal tar in 1834; used as an antiseptic from 1867. 4
