SIMURG
riddling
EN
n.
In methode Champenoise, turning bottles of sparkling wine to collect the sediment on the closure for removal during disgorging. 1
It involves dislodging the deposit left in a bottle after a second fermentation has taken place inside it and shaking it into the neck of the inverted bottle. It can be achieved either by hand or, more speedily, by machine. Modern alternative techniques may eventually render this cumbersome process superfluous. (A riddling rack is English for pupitre). 2
Wineries also “spin” the bottles to dislodge the sediment before riddling. […] 3
