The first phase of wine sensory assessment, where the quality of wine is evaluated by analyzing its appearance.
Each sample is held at eye level and viewed at a 30° to 45° angle against a white, bright background to improve light transmission and make visual characteristics more easily assessable. Several features are taken into consideration: clarity, color hue and depth, viscosity and effervescence, which convey information upon factors such as the microclimate, the terrain and the quality of the grapes; seasonal conditions and the ripeness of the grapes at the time of harvesting; the duration of maceration; the various techniques of vinification; the use of wooden containers etc.
The ideal lighting for the visual examination of wine usually is considered to be natural north lighting.
