heat exchanger
EN
c. n.
Apparatus used to heat or cool must or wine by passing another liquid in the opposite direction through a series of tubes in the small contact with the must. 1
In a heat exchanger a hot fluid (e.g. hot water or steam) is used to heat a cooler fluid.
The two fluids will be separated by some physical barrier such as a tube wall or a metal plate. 2
Heat exchanger plates can be installed through the manholes of all the usual wine tanks on the market. 3
