Nota

Wood was a traditional material for centuries, but that was replaced by cement vats which in turn have largely been replaced by stainless steel, with modern temperature controls. Some wine, such as Pinot Noir, can still benefit from the proper use of classic wooden, open topped vats. 2

Contesto

Carbonic maceration: special way of making fruity, early-maturing red wines, most notably Beaujolais, by fermenting them in a sealed vat filled with carbon dioxide. 3
