An acid found to a limited extent in both grapes and wine [...] [that] is a white crystalline solid [...] and soluble in water and alcoholic water solutions such as wine. 1


Succinic acid is formed by yeast, and small quantities of this acid are always produced during the primary fermentation. The production of succinic acid stops when alcoholic fermentation is complete. The flavor of succinic acid is a complex mixture of sour, salty and bitter tastes, and succinic acid is responsible for the special taste characteristics all fermented beverages have in common. Once formed, succinic acid is very stable, and it is seldom affected by bacterial action. 2
Succinic acid quantity is at 0.4-0.5 g/L (grams/Litre). It is also considered superior to all other acids in its ability to produce rich, flavourful esters during the aging process. 3


It was determined that the predominant nonvolatile organic acid formed during fermentation is succinic acid (90%). 4

Succinic = F. succinique, formed with suff. –ique (see adj. suff. –ic) fr. L. succinum, sucinum, ‘amber’, which is a loan word from a N. European language and has been assimilated in form to L. sucus, succus, ‘juice, sap’.

Acid = either fr. F. acide or directly fr. L. acidus, ‘sour’, fr. acere, ‘to be sour’, whence also acetum, ‘vinegar’ (see acetum); introduced into English by Francis Bacon (1561-1626) in 1626. 8
