Definizione

Edge of wine surface [used in evaluation of wine age] as seen through a "ballon" (goblet) style wineglass held at an angle of about 30-40 deg. from the vertical and viewed against white piece of paper or cloth using natural light. 1

Nota

[...] You can also tell something about the age and ripeness of a red wine by tipping the glass slightly away from you and look at the colour of the wine rim on the far side against a white background. If the rim has a purplish tinge, the wine is very young and may not be ready for drinking. If the rim has a brownish hint, the wine is mature and ready. If more than the rim is brown, in fact the whole issue is brownish, then the wine is very old and may be past its best. 2

Contesto

The colour of the rim is an indicator of wine's age. 3
