Nota

Choice of dried grape: failure to use some form of grape in the mixture may result in an anaemic wine. The following comments may be helpful:
Raisins are dried red grapes. Their flavour is quite strong and results in the finished wine having a strong hint of sherry in its makeup. It is most noticeable when the other ingredients have weak flavours. If you dislike sherry, raisins should be avoided. 2

Contesto

The main grape variety is in principle the Italian native red Sangiovese, which derives its name from ‘sangue de Jovis’. Straight Chianti is no longer an anaemic basic red wine, since today's Chianti 'normale' is no longer lightened in the vat with a generous dose of dull white varieties as was traditionally the case. 3
