Definizione

Any of various water-soluble pigments that impart to flowers and other plant parts colors ranging from violet and blue to most shades of red. 1

Nota

Anthocyanins are essentially a coloured form of tannin; both anthocyannins and tannins are phenols which are principally extracted from the barrel during maturation – the newer the oak the higher the rate and amount of extraction. 2

Contesto

The colour changes during wine maturation are usually attributed to the formation of new pigments resulting from the interaction between anthocyanins and other phenolic compounds. 3
