Kaolin is a white, nonporous, nonswelling, natural aluminosilicate mineral. 1

Fining agents are added to juices, wines, and sparkling wine cuvées for the purposes of enhancing clarity, color, aroma, flavor, and/or stability modification. Fining agents can be grouped according to their general nature. Earths: bentonite, kaolin Proteins: gelatin, isinglass, caseins, pasteurized milk, albumens, yeasts Polysaccharides: alginates, gum arabic Carbons Synthetic polymers: PVPP, nylon Silica gel (silicon dioxide) Tannins Others: including metal chelators, blue fining, and enzymesThe mechanisms of action of fining agents may be electrical (charge) interaction, bond formation, and/or absorption and adsorption. In the case of electrical interaction, particles of opposite charge to the fining agents are induced to coalesce with the agent, forming larger particles. Due to its greater density, the complex eventually settles from solution. 2

Growers use kaolin to help control damage to fruits and vegetables from insects, mites, fungi, bacteria, and to protect against sunburn and heat stress. 3

Contesto

Common fining agents that are not derived from animals and are thus suitable for vegan wine drinkers include: bentonite clay, diatomaceous earth, carbon, and kaolin (similar to bentonite clay). 4

"China clay," 1727, from Fr. kaolin (1712), from Chinese Kao-ling, transliteration of the name of a mountain in Jiangxi, China, from Chinese gao "high" + ling "mountain, hill." 7
