Bentonite is a special type of very fine clay of the aluminum-silicate type [...]. 2 When used in wine making, it is stirred into the wine to remove proteins and other haze causing particles. It works through adsorption. This means that it attaches itself to a particle, and together they are too heavy to stay in suspension, falling to the bottom of the carboy, leaving the wine clear and stable. Bentonite settles out so completely that it does not leave any residue of taste or color behind[…]. 3 Bentonite fining is also used in making everyday white wines for the clarification of must before or, for more commercial wines, during fermentation to remove solids that would otherwise make the wine look darker, taste coarser and possibly form clouds in bottle. 4

Contesto

An unwanted outcome of fining with bentonite is an inevitable loss of flavour resulting from adsorption of flavour molecules on the surface of the fining agent. 5
