The wine-making process of removing the stems, or stalks, from clusters of grape berries.

In traditional and smaller-scale wine making, the harvested grapes are sometimes crushed by trampling them barefoot or by the use of inexpensive small scale crushers which can also destem at the same time. However, in large wineries, a mechanical crusher/destemmer is used.

Contesto

De-stemming is usually carried out with a mechanical destemmer, where the bunches are passed along the inside of a perforated drum.
