Varietal character 1 refers to taste, aroma and structure typical of a particular vine. A varietal wine always displays basic qualities, which are inherent in the grape's personality, even grown in different places. For instance Muscat should be spicy, Sauvignon Blanc herbaceous, Cabernet Sauvignon fruity (plum, currant and black cherry). 2 3

Meaning "having the characteristics of a variety" was first attested in 1849. In reference to wines, "made from a single variety of grape" (1941).

character:
- from Old French caratere "feature, character",
- from Latin character and from Greek kharakter "engraved mark", "symbol or imprint on the soul", "instrument for marking".
Meaning extended in ancient times by metaphor to "a defining quality." Sense of "person in a play or novel" was first attested in the 1660s, in reference to the "defining qualities" he or she was given by the author. Meaning "a person" in the abstract is from 1749; especially "eccentric person" (1773). Colloquial sense of "chap, fellow" is from 1931. 6
