Nota

If you are tasting a series of similar wines, there is really no need to rinse with water, unless you happen to hit a wine that is corked or spoiled or offensive in some way. In that instance, the best idea is to rinse with a small pour of the incoming wine, giving it a good swirl around the bowl of the glass before dumping it out. This is always a good idea at the start of a wine tasting. Conditioning a new glass in this way will help to eliminate any lingering aromas or off-flavors from the dishwasher or the cupboard. Rinsing with water during a tasting inevitably leaves a small but significant amount of water in the glass, which in turn dilutes the wine that is poured. The water itself may also have undesirable flavors, whether it is tap water or mineral water. Of course, if you are switching from white wine to red, or dry wine to sweet, it makes sense to get a new glass instead of a rinse. 2.
