A technique for clarifying wine using agents such as bentonite (powdered clay), gelatin or egg whites. 1

Nota

Wine-making process with the aim of clarification and stabilization of a wine whereby a fining agent, one of a range of special materials, is added to coagulate or adsorb and precipitate quickly the colloids suspended in it. Fining (collage, or ‘sticking’, in French) is important because, by encouraging these microscopic particles to fall out of the wine, the wine is less likely to become hazy or cloudy. 2

Etimologia

Fine: mid-13c., “ unblemished, refined, pure; of superior quality”, from O.Fr. fin “perfected, of highest quality” (12c.), from L. finis “end, limit”. In French, the main meaning remains “delicate, intricately skillful”; in English since mid-15c. fine is also a general expression of admiration or approval.
-ing: suffix attached to verbs to mean their action, result, product, material, etc., from O.E. -ing, -ung. Originally used to form nouns from verbs and to denote completed or habitual action. Its use has been greatly expanded in Middle and Modern English. 5
