Suppleness is the one great quality sought for in red wines. The word is frequently misconstrued. A supple wine does not shock the palate. Suppleness does not just mean low in tannin content, it also corresponds more than anything to low acidity. Above 3.6 g of total acidity, no wine can possibly be called supple.
