Definizione

The practice of pouring a small amount of wine into a glass to maximize one's olfactory experience of the wine and to totally remove any remaining traces of residual odor or detergent from the glasses themselves. 1

Nota

The wine is swirled and the glass tipped, with the idea being to entirely coat the inside of the glass. The wine is then poured into the next glass and the process repeated until all necessary glasses have been "seasoned." […] The biggest bone of contention for those not in favor of the practice seems to be that the ounce or so of wine used for seasoning is usually sacrificed. 2

season: "improve the flavor of by adding spices," c.1300, from O.Fr. assaisoner "to ripen, season," from root of season (n., c.1300, "a period of the year," with reference to weather or work, from O.Fr. seison (Mod.Fr. saison) "a sowing, planting," from L.sationem (nom. satio) "a sowing," from pp. stem of serere "to sow") on the notion of fruit becoming more palatable as it ripen.

-ing: suffix attached to verbs to mean their action, result, product, material, etc., from O.E. -ing, -ung, from P.Gmc. *unga (cf. O.N. -ing,Du. -ing, Ger. -ung). 5
