Definizione

Operation consisting of putting sulphur dioxide in a grape crop, must or wine in order to ensure a good vinification and a good preservation of wines. 1

Nota

Sulphites are naturally produced by the yeasts during the wine processing. The addition of SO2 is traditionally considered as an efficient method to protect and preserve the wine at different stages of its elaboration.
The European Wine Regulation fixes total SO2 maximum doses in the end product; they vary according to wine types, and notably in relation to the presence of residual sugars, going from 150mg/l for red wines to 400mg/l for sweet wines. 2

Dry wine cannot ferment anymore and so no sulphiting is necessary. 3

sulphur = c.1300, from O.Fr. soufre (13c.), from L.L. sulfur, from L. sulphur, probably from a root meaning "to burn."
