Also known as bulk process, this is an inexpensive way to create bubbles in sparkling wine. The wine undergoes fermentation in stainless steel tanks rather than individual bottles, and is bottled under pressure rather like pop. 1
Eugene Charmat, a Frenchman, invented this process in 1907. Instead of individual bottles to produce the secondary fermentation, he invented the glass-lined tank. The wine stays under constant pressure in bulk, through the filtering and bottling process, which takes as little as ninety days from picking to bottling. It is also known as the bulk process. 2
The Charmat method (also called the "Italian Method") of producing sparkling wines is often used in the crafting of Prosecco. 3
