The action or process of vaporizing a substance by heat, condensing it by cold in a special vessel, and re-collecting the liquid. 1

Nota

[Distillation] remains essentially a simple process, physical rather than chemical, separating the alcohol and other impurities in the wine (or other ferment) from the water which forms its bulk. […] Distillation consists merely of heating the wine, or any other fermented liquids, and then capturing the fumes. 2

Contesto

To complete the making of a quality distilled spirit or beverage, the alcohol obtained from distillation will be aged in a charred wooden barrel. 3
