Nota

The processes of fining and filtering are carried out on most wines near the end of the maturation period when they are almost ready for bottling. The purpose of these procedures is to clarify the wine – that is, to remove any cloudiness or solid matter in wine – and to stabilize it – to remove any yeast, bacteria, or other microscopic critters that might change the wine for the worse after it is bottled. 2
