Definizione

Wine-making term for protecting grapes, juice or wine, particularly from oxygen, by applying a gas, usually inert gas or sometimes carbon dioxide. 1

Nota

Blanketing (liquid) food or beverages is done by putting a “blanket” of nitrogen over the product. The product is usually stored in a tank and the headspace of the tank is filled with nitrogen to displace atmospheric air and thus oxygen and water vapor to avoid oxidation. 2

Contesto

The easiest method [to store leftover wine from an unfinished bottle] is to simply recork the bottle; however, various more sophisticated methods exist including using a vacuum pump to reduce the amount of air in the bottle, blanketing the wine with inert gas or decanting the leftover wine into a smaller bottle (with little or no room for air). 3
