A vineyard practice developed by man primarily to produce fewer but larger bunches of riper grapes and is particularly important in cooler climates. 1

Nota

Pruning is one of the most important practices in viticulture and in the case of wine grapes one of the main ways in which the crop size may be restricted. The following are the four main aims of pruning:
i. To develop the desired shape of young vines.
ii. To obtain a good balance between crop and growth of each individual vine and to maintain this balance.
iii. To obtain regular crops of the desired quality.
iv. To obtain bearers in the desired position and as near as possible to the permanent trunk, to rejuvenate vines and remove unproductive growth. 2

It is convenient to know how to manage winter pruning to obtain the best grapes while the vines are in full productivity period. 3

Winter = O.E., "fourth season of the year," from P.Gmc. *wentruz (cf. O.Fris., Du. winter, O.S., O.H.G. wintar, Ger. winter, Dan., Swed. vinter, Goth. wintrus, O.N. vetr "winter"), possibly from PIE *wed-/*wod-/*ud- "wet" (see water), or from *wind- "white" (cf. Celt. vindo- "white").

Pruning = form to prune: 1426, prouyne, from O.Fr. proignier "cut back (vines), prune," of unknown origin, perhaps from Gallo-Romance *pro-retundiare "cut in a rounded shape in front", from pro- "forth" + *retundiare "round off", from L. rotundus. 5
